Okinomiyaki
It literally translates to ‘what you like, grilled’. A great way to use up cabbages or any brassica leaf really and eggs! Add a good handful of fresh herbs and top with kewpie. Yum!
Ingredients:
1 cup flour
1/4 tsp baking powder
1 tsp stock powder
1/2 cup water
4 eggs (or 5 bantam eggs)
small cabbage, finely chopped
spring onions and other herbs (try chives and society garlic), chopped
Garnish: more herbs, finely chopped nori sheets, chilli, kewpie mayo.
Sauce: 2 tbs relish/tom sauce, 2 tbs Worcestershire, 1 tbs soy, 1 tbs honey
Method:
Preheat oven with a tray inside to 180 degrees*.
Whisk the flour, baking powder and stock. Add the water and eggs and whisk until combined. Add the cabbage and herbs and mix. Heat a non-stick fry pan, add a little oil and tip in half the mix. Cook until golden underneath and then flip onto your hot tray. Brush the top (the cooked side) with the sauce and put in the oven to cook through and keep warm. Add a bit more oil to the fry pan and the second half of the mix and repeat.
Flip both pancakes back to their original side and brush with sauce again.
Garnish and serve.
*If you’re a pro flipper, have multiple fry pans or are make half the mix (one pancake) you can skip this step.
